Lotus Root, Pumpkin & Pork Soup (Slow-Cooker, AIP, Whole 30)

Ingredients:

  • 1 ½ lbs pastured pork ribs

  • 8 cups filtered water

  • 2 ½ cups pie pumpkin (small, peeled, seeds removed, chopped)

  • 8 ⅛ ozs lotus root (medium, peeled, halved, and sliced)

  • 2 tbsps fresh ginger (peeled, sliced)

  • ½ tsp Redmond’s salt

Directions:

  1. Add the pork ribs, water, pumpkin, lotus root, ginger, and salt to the slow cooker. Cook for at least four hours on high, or six to eight hours on low.

  2. Remove the ginger slices and discard. Shred the pork off the bone, and season the soup with salt to taste as needed. Enjoy!
