Raw Cacao Energy Bites

When you’re craving something sweet and delicious, but don’t want to start the oven in the heat of the summer? Instead, bust out your food processor and press this healthy dessert into bars or roll into balls (personal fav). Store in the fridge or freezer!

Ingredients: (yields about 20 balls)
1/4c. walnuts, sprouted
1/4c. ground chia seeds
1/2c. pitted dates
1/3c. raw cacao powder
1/2c. pure almond butter (no sugar or oil added)
1T pure maple syrup (optional)
1/2 tsp. vanilla extract
1/4 tsp. salt (I like Celtic gray salt or pink Himalayan)
1/2c. whole almonds
1/4c. shredded unsweetened coconut

Directions:

Place the walnuts and ground chia seeds in a food processor and process until coarsely ground.
Add the dates, and pulse until combined with the nuts. Add the cacao powder, maple syrup (if
using), almond butter, vanilla, and salt. Process until the mixture is thick and smooth. Add the
almonds and coconut, and pulse a few times until combined- you want the almonds to still remain in
crunchy chunks. Form the balls with a scoop and then roll them between your hands to form a ball.
Place in a sealed container in the freezer until hardened. Keep refrigerated, or keep in freezer. Enjoy!
