Slow Cooker Beef Heart & Vegetables
Ingredients:
2 tbsp Avocado Oil
2 lbs Beef Heart (fat trimmed)
1 tsp Sea Salt
4 Carrots (chopped into 2-inch pieces)
1 Yellow Onion (chopped)
1 Leeks (sliced)
1 tbsp Dried Thyme
3 1/2 cups Beef Broth
2 Bay Leaf
8 Garlic (cloves, minced)
Directions:
In a large skillet, heat the oil over medium-high heat. Season the beef with sea salt and pat it down. Once the skillet is warm, add the beef heart and sear until browned, roughly 4 minutes. Turn and repeat on the other side.
Add the beef to the slow cooker. Add the remaining ingredients being sure to pour the broth over top of the beef. Cover and cook on low for 8 hours, or high for 4 hours, until cooked through.
Thinly slice the beef against the grain. Serve with the vegetables. Enjoy!
