Beet Ginger Coconut Soup
Isn’t this color dreamy? I am forever amazed by the colors nature has to offer us.
This soup is creamy, beautiful, delicious, and filling. I love the smooth flavor. Feel free to spice it up how you please and let me know what you did! This one is wildly flavorful and rich in nutrients, boosting detox, nourishing adrenals, and reducing inflammation.
What to source:
2 bundles of beets
2 cans of full-fat coconut milk (I like Native Forest Simple)
1 knob of fresh ginger (peeled with a spoon!)
2 tbsp coconut oil
a pinch of salt (to taste)
What to do:
Boil beets for 10 minutes.
Remove the skin under cold running water.
Blend beets with coconut milk, ginger, coconut oil and salt.
Heat over the stove
Enjoy!
