Pickling Party!

I love pickling! It is amazing for your gut and preserving lots of produce. Especially if you find yourself with an abundance from your local CSA farm share!

What to source:

12 1-pint canning jars with lids, sterilized

10 cups of filtered water

5 cups white vinegar

1/2 cup pickling salt

10 cups fresh produce (onion, cauliflower, okra, cucumber, anything you like)

1 cup pickling spice

1-2 cups fresh dill on the stalk

12 dried red chilies

24 cloves garlic

What to do:

  1. Make a spread of all the ingredients you want to pickle for easy grabbing and pretty pictures.

  2. On the stovetop, bring the water & vinegar to a boil (add salt once boiling).

  3. Once salt is dissolved, turn heat off.

  4. In the bottom of each sterilized jar, put

    1 tbsp pickling spice, 1 tbsp dill, 1 red chili, and 2 garlic cloves.

  5. Fill the jar with produce, packing tightly!

  6. Add 1 more tbsp of dill on top of the produce

  7. Fill jar to the very top with brine.

  8. Dry the rim of the jar, put lid on, and seal tight.

  9. Store in a cool, dry place for about 2 weeks then put in the fridge.

  10. Enjoy!
